I was scrolling through Bloglovin's popular posts feed today when I saw this amazing recipe for Healthy Breakfast Sweet Potatoes.  I had picked up a big bag of sweet potatoes at the supermarket this week so decided to give it a go.  I changed the recipe up a little though, I didn't have any paprika or garlic powder, so I used a vegetable seasoning and also added some diced yellow & red peppers as well.


Peeled and diced four sweet potatoes while the baby was napping, added all the ingredients, cooked for 45 minutes and viola:


Seriously amazing!  I had it for dinner with eggs and loved it.  A great alternative to greasy hash browns.  I'll have to keep an eye on Peanut Butter Fingers for more great recipes!

100 Days of Yoga

One of my goals this year is to practice yoga.  I've tried miscellaneous yoga videos before, and even took a power yoga class seven or so years ago, but wind up feeling completely inadequate and don't stick with it.  I can't touch my toes.  I don't have the strength to hold a plank pose.  I try to meditate but find myself making a mental list of all the things that I need to do when I'm done.

But even with my inadequacies, I find myself drawn to it.  I would love to find some peace of mind.  I'd like to gain flexibility and grace.  I'd like to feel more in control of my body.  When I see yogi's like @gypsetgoddess and @talia_sutra I feel awe and inspiration.  Part of me thinks, get serious you'll never be able to poses that like that, but another part wants to believe someday I could, with practice and time.


I'm hoping to take a yoga course in the upcoming months if my schedule will allow it, but for now I'll be starting with 30 Days of Yoga via Yoga With Adrienne.  I'll also be joining giveit100.com -a website that challenges you to practice something for 100 days and record a video each day- which will add a level of accountability and (hopefully) keep me from getting lazy.

This is the year I stay strong and don't give up on my goals!

Hello 2015!  I am so excited for the new year and want it to be a time for change.  I want to challenge myself to take better care of myself, to take risks, and to step out of my shell and pursue my interests.  My goals for the new year are to:

Get Healthy Create More
learn yoga try new mediums
lose 30 lbs learn ukelele
eat less sugar + processed foods submit writing for publications
destress

Read Often And:
watch less tv get out and meet new people
read at least two books a month move to a new apartment
make time to visit the library earn additional income
practice driving

I'll be using this space to write about my daily life, post updates on my goals, as well as share inspiring and favorite things from across the web. 

Here's hoping for a good year to come!
