
I was scrolling through Bloglovin's popular posts feed today when I saw this amazing recipe for Healthy Breakfast Sweet Potatoes.
I had picked up a big bag of sweet potatoes at the supermarket this
week so decided to give it a go. I changed the recipe up a little
though, I didn't have any paprika or garlic powder, so I used a vegetable seasoning and also added some diced yellow & red peppers
as well.

Peeled and diced four sweet potatoes while the baby was napping, added all the ingredients, cooked for 45 minutes and viola:

Seriously amazing! I had it for dinner with eggs and loved it. A great
alternative to greasy hash browns. I'll have to keep an eye on Peanut Butter Fingers for more great recipes!
